  1. Heat a pressure cooker. Add ghee/ oil, fry cashew nuts, raisins keep them aside. Now add 1 cinnamon, cloves (4nos), cardamom pods (4nos), Bay leaf (1) and fry it slightly, now add finely chopped onion (1) saute well till it becomes translucent. Now add 3 chopped green chillies, ger garlic paste, saute it, add turmeric powder (little), red chilli powder (little), garam masala powder, saute it.
  2. Add 1 chopped tomato saute it. Add vegetables (green peas, chopped beans carrots) salt (As required). Now add water (for 1 cup rice 1 3/4 cup water).
  3. When water bes to boil add washed drained 1 cup rice (small variety jeerakasala rice used for this preparation). Close the lid. Cook upto 3 whistles.
  4. Garnish with previously fried cashew nuts, raisins chopped coriander leaves.
  5. Serve this Pulav with cucumber raita.
  6. Cucumber Raita: - Wash peel the skin of cucumber. Chop/ grate it. In a bowl add curd, chopped green chillies (2), salt (to taste) grated cucumber. Mix well.
