  1. Prepare 250 gms Okras (Bhindi)
  2. Make ready 3-4 tbsp Oil
  3. Take 1/2 tsp Mustard Seeds

  6. Take pinch Asafoetida
  7. Get 1 Onion (Sliced)
  8. Take 3-4 Green Chillies (Slited)

  10. Get 1 small Tomato (Finely Chopped)
  11. Take 1/2 tsp Turmeric Powder
  12. Take As per taste Salt
  13. Take 1/2 tsp Black Pepper Powder
  14. Make ready 1/2 tsp Cumin Powder
  15. Take 1/2 tsp Fennel Powder
  16. Make ready 1/2 tsp Aamchur Powder
  17. Make ready 1/2 tsp Garam Masala Powder

Instructions to make Okra Sabzi:

  1. Wash the okras nicely. Pat it dry with a kitchen towel. Chop out both ends. Further, chop into small pieces and set aside.
  2. Heat oil in a kadhai. When the oil is hot, add mustard seeds and allow it to crackle. Add cumin seeds and fennel seeds and asafoetida. Saute till they turn aromatic.
  3. Add green chillies and curry leaves and saute for a minute. Add the sliced onions and further saute till light golden.
  4. Add tomatoes and salt and saute till they turn soft.
  5. Add the spices ie. turmeric powder, pepper powder, cumin powder, fennel powder and aamchur powder. Saute on low flame till the spices get cooked well.
  6. Add in the okras and mix gently. Cover and cook on low flame till the okras are well cooked.
  7. Add in the garam masala powder and mix well.
  8. Finally, serve the okra sabzi with steamed rice and dal/sambar, papad, garlic chutney, sliced cucumber.
