The ingredients needed to make Avocado Smash:
- Make ready 2 slices bread to toast
- Take 1 ripe avocado
- Take 2 handfuls fresh spinach
- Take 2-3 eggs, you be the judge :)
- Get chipotle mayo
- Take smoked paprika or cavenders spice (optional)
Instructions to make Avocado Smash:
- If possible, go to Costco and get the chipotle mayo they carry there. It seems to be seasonal so it may not be in yet but it’s my fave. Beware though! This sh*t is addictive!!
- Take your avocado, open up, remove the pit and scoop both sides into a bowl. Put your chipotle mayo in, as much as you prefer and then smash and mush it all up together. The consistency is really a personal choice but I like mine to be kinda thick like mashed potatoes.
- Baste your eggs to your liking, I’m a runny yolk kind of girl. Sprinkle on some smoked paprika or cavenders spice before covering them. While the eggs are basting, get your toast ready and spread your avocado mix on then put your spinach on top of that.
- When the eggs are done, move them over to your toast creation. Om nom nom! 😋😋😋
