Instructions to make Vegetable Briyani in Pressure cooker:
- Take 1 cup of basmati rice and rinse with water fir 3 or 4 times untill water runs clean. Soak it in fresh water for 20 minutes.
- Chop all the required veggies and keep it ready.
- In a pressure cooker heat 2 tbsp oil +1tbsp ghee.add the whole garam masala spices listed under WHOLE SPICES SECTION.
- Once the spices turn aromat add finely chopped onions and gren chilli.fry it till golden brown.
- Then add the chopped tomatoes and fry till they are slightly mushy.
- Now add the ger garlic paste and saute till the raw smell goes away.
- Add handful of chopped mint leaves and give a quick sir.
- Add 2 tbsp of water before adding the spice powders to prevent it from burning. Add the spice powder listed under the SPICE POWDER section and saute for a minute.
- Add all the chopped veggies and stir well that the masala gets coated to the veggies well.
- Add 4 tbsp of curd to veggie mixture and stir for a minute.The curd shouldnt be too sour.
- Pour 2 cups of water and once the water boils add the soaked basmati rice by draining the water.Add salt according to according to your taste. Check for salt and other spices add if you require any.
- Add 1 tsp of lemon juice and mix it well.Once it starts boiling sprinkle chopped coriander leaves on the top and pour 1 tbsp of ghee over the top and close the lid.
- Cook for 2 whistles on high flame and sim for 5 minutes. Switch off the stove and wait for the pressure to release.
