  1. Wash Matumbo. Then put to boil for 3 hours when using a jiko but if using a pressure cooker, it should take 90mins.
  2. It should be soft after 30 minutes.
  3. Remove from heat, allow to cool then cut the Matumbo into small pieces. Dice the tomatoes too and onions
  4. In a clean pan fry the onions until golden brown, add in tomatoes.
  5. Stir until the tomatoes are mashed up then add in Matumbo and salt.
  6. Mix very well. Then add in a little water and finally royco.
  7. Boil for 30 minutes
  8. Serve with Ugali
