- Take 5 strips hickory smoked , cut in big cubes
- Take 2 lb bag of pre-washed collard greens

- Sit greens in sink filled with cold water to rinse off any dirt.
- Cut each strip if into 4 pieces. Cook in Dutch oven pot until crispy. Remove and add greens. Fill pot with water until just covering the greens.
- Cover pot. After about 30 mins add salt, sugar, pepper and let boil, covered for an hour. Continue to stir about every 30 minutes until finished. Add pinch of red pepper at end. Add salt/ sugar and pepper to your liking.
- Add cooked back into pot. Traditionally many used “fatback” instead of for deeper flavor OR you may used smoked turkey wing or smoked turkey neck!
