- Remove potatoes from water. do not discard remaining water, but do remove from heat
- Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil. sprinkle with coarse salt and pepper
- Place in hot oven to toast and brown a bit. Approximately 20 to 25 minutes depending on your oven.
- Remove from oven and sprinkle with parsley. Serve
