- The peppers on the left are Serrano chili peppers. They’re much longer and thinner than the jalapeño on the right and have a milder flavour.
- Slice the Serrano chili peppers in half vertically and use a spoon or knife to get rid of the seeds.
- Boil some water with a pinch of salt in a saucepan and add the onion (the quartered half), tomatillos, and cilantro in that order.
- When the water comes to a boil once again, stop the heat and drain the vegetables. Add the vegetables to a food processor and blend them until smooth.
- Transfer the mixture to a bowl and mix in the finely chopped onion, scallions, cilantro, and salt.
- Chill the salsa in the refrigerator and serve with chips.
