- In a pot, heat the olive oil and sauté the vegetables in order of onions, garlic then fresh shiitake mushrooms. Add all the other vegetables (except the tomatoes) and continue to fry.
- Add a pinch of salt. When the vegetables are tender and lightly browned, add the tomatoes. When the tomatoes break down, pour in red .
- Add the bay leaf and simmer until thickened. Give it time to simmer for the flavors to soak in. Add salt and pepper to taste and it is ready.
- Cook your favorite pasta and serve it with the sauce. Rigatoni is used in the photo.
- This sauce can be used in lasagna as well. This bolognese sauce also goes well with gnocchi.
