  3. Make ready 1-2 tbsp milk - or 1 tbsp goats or natural (absolutely no sugar added) yogurt… if you’re not a dairy person, you can skip this- it will be a slightly different consistency and colour
  4. Get Black pepper or a generous pinch of chilli flakes or chopped chives or chopped parsley… so many options!
  5. Make ready Toast

Instructions to make The ’perfect’ scrambled eggs 😉:

  1. Heat a frying pan/ flat-ish pan on a low-medium heat.
  2. In a jug/ bowl, crack the two eggs. Top tip: if some eggshell goes in, lift it out using a big piece of eggshell… way easier than using a teaspoon.
  3. Add the milk/ yogurt if using.
  4. Add a few good grind of pepper or the chilli or herbs.
  5. Beat (stir really quickly) for a minute or two using a fork. To mix it all together and to get some air into the mix.
  6. Melt the butter in the pan.
  7. When it’s melted, pour the eggs in. And wait! Until the mixture starts to set - this can take a minute or more.
  8. When the eggs be to set, start stirring/ gently moving them around. Be sure to move them in from the edges of the pan. You don’t have to stir all the time… just most of the time ;)
  9. Keep stirring until the moment you can’t see any liquid. Take off the heat and leave for a few second. The eggs will keep cooking.
  10. Serve on toast and season/ add more herbs / whatever you want. Enjoy 😋
