Instructions to make Chickpea Hummus Quesadilla:

  1. First add the roasted sesame seeds to a jar. Crush pulsing it. Add a tbsp of water and grind till smooth. Now add the remaining ingredients except chickpeas,flakes and herbs. Grind to a smooth paste adding a bit of water.
  2. Now add the cooked chickpeas which are deshelled to get a smooth texture of the final product.
  3. Continue grinding adding little water till you get a smooth textured sauce.
  4. Voila the hummus is ready. Garnish with olive oil and red chilli flakes and herbs.
  5. Now take a leftover roti or tortilla. Take a heap full of prepared hummus and apply on one half of the tortilla.
  6. Sprinkle some herbs and flakes over. Now layer first with chopped onions then goes some chopped capsicum and lastly goes some grated carrot. Sprinkle some salt and pepper and drizzle with some lemon drops.
  7. Top it with cheese
  8. Now fold it. Butter it generously on top side. Heat your grill pan. Place it gently with the help of a wide spatula. Grill pressing gently on a low flame. Allowing the cheese to melt
  9. Grill well on one side. Now turn the side gently and apply butter. Grill further.
